In Germany, a scientific experiment aimed at incorporating mealworms into traditional Bavarian white sausages has ignited public controversy and social media backlash. Researchers at the University of Kulmbach added mealworm powder to the classic recipe, which includes pork, beef, parsley, spices, and salt.
The new formulation reportedly darkened the sausage compared to conventional versions. According to the project, up to 20% of the minced pork was replaced with dried mealworms. The study sought alternative protein sources and potential environmental benefits from insect-based food production.
However, researchers anticipated minimal public reaction and were surprised by the strong negative response. Professor Janina Henkel-Oberlander, a lead researcher in nutritional biochemistry at the University of Bayreuth, acknowledged that the team underestimated the backlash.
Despite being legally permissible under EU regulations, mass-market sales of the mealworm-enhanced sausages have not been planned for Germany.
